Super filling vegan granola bars

When you only have a few things in the house and want a snack that doesn’t involve waiting:

2 cups of oats
1 cup of loosely broken salted pretzels
1/2 cup peanut butter
1/2 cup maple syrup
1/3 cup sugar
1/2 cup raisins or other dried fruit
1/2 cup vegan chocolate chips (I like Ghirardelli)

Combine syrup and sugar in saucepan over medium heat until boiling. Add peanut butter. Remove from heat. Mix with oats, pretzels, raisins and chips. Press into an 8×8 square pan. When covered, the bars keep well for a few days.

This week we are trying to stretch the groceries on hand in our cupboard. We have been substituting the bars for a main dish in our lunch boxes and are surprised at how much they fill you up.
