Rockville Vegan Gluten-Free Apple Crisp

1/2 cup of walnuts
1/2 cup of almonds
1 cup of oats
3/4 cup sugar
3 tbs. soy margarine
6-8 apples, peeled and sliced

In a food processor on high, grind oats to a flour. Do the same with your almonds. Chop walnuts coarsely.

Mix 1/2 cup ground oats, 1/4 cup ground almonds, 1/4 cup sugar, and 1 tsp cinnamon with your apples. Place in deep baking dish (I used a casserole dish that was appx. 3 in. deep). Mix together 1/2 cup ground oats, 1/4 cup ground almonds, 1/2 cup sugar, and 1/2 cup chopped walnuts. Cut in soy margarine until mixture is coarse and crumbly. Top apple mixture. Bake covered at 350 degrees for 30 minutes, uncover dish and bake an additional 10-20 minutes until top begins to brown.

Let cool for a few minutes, but this is delicious when it is still a little warm, like we ate it our last night our our Mid-Atlantic Adventure 2009.
