Baked Pumpkin Oatmeal

I saw this recipe posted on the Craftzine blog and I’ve been wanting to try it for the past few weeks. After I made it once, I made it again the next day I liked it so much! Below is how I altered the original.

Baked Pumpkin Oatmeal

1 cup old fashioned oats
1/2 tsp cinnamon
1/8 tsp nutmeg
2 tbs maple syrup
3/4 cup pumpkin puree
1/4 cup raisins
3/4 cup unsweetened soy milk
dash of salt

Topping
1/2 cup chopped walnuts
1 tbs. soy butter
2 tbs. brown sugar

Preheat oven to 375 degress. Lightly grease a small baking dish, approximately 6×8 inches. Combine oats and spices. Add pumpkin puree, soymilk, salt and raisins. Mix thoroughly. Pour into pan. Cook for 7 minutes.

While pumpkin oatmeal is cooking, mix walnuts, soy butter and brown sugar together until crumbly. After you remove pumpkin oatmeal from oven, add topping and bake for another 7 minutes.

Enjoy with other oatmeal lovers on a cold winter morning!

    Sounds awesome, Kelly!! What do you mean by old fashioned oats – the steel cut kind? And are they pre-cooked, or right out of the canister?

    Thanks, Alison! By old-fashioned oats, I just mean the kind that looks like whole oat flakes right out of the canister. Not steel cut or quick oats. The pumpkin, soymilk and heat from the oven will cook them up nice and more like a cake than a bowl of oatmeal.
