Red Onion Zucchini Pasta Salad

Easy and light and spicy, this dish was an oasis in the middle of the holiday heavy, greasy, sweetie, salty, family-style binge eating. We brought it to a family party and got lots of compliments!

Red Onion Zucchini Pasta Salad

1 lb. Ditalini (or other small) pasta
2 small zucchini
1/4 red onion
1 bunch flat leaf parsley
4 tbs. olive oil
2 tbs. balsamic vinegar or more to taste
Sea salt to taste
Generous fresh ground pepper to taste

Peel and finely chop zucchini, red onion, and flat leaf parsley. Prepare pasta in salted water according to directions. Drain and rinse with cool water to stop pasta from cooking. Place in large bowl. Mix with olive oil, vinegar, salt and pepper. Add in vegetables. Season to taste.

Enjoy right away or the next day! And by the way, Ditalini means little thimbles!
