Pear Cobbler

Cobbler of any kind is a winner in our book. And it’s pear season, one of my favorite times of the year! This recipe can be dessert for a crowd or cut down for a breakfast treat for two.

Pear Cobbler

6 medium sized pears
2 1/3 cup all purpose flour
3 tsp. baking powder
1 tsp. sea salt
1/2 cup vegan shortening
1/2-3/4 cup of unsweetened soy milk
1/2 cup sugar
2 tsp. vanilla
1/2 tsp cinnamon

Preheat oven to 400 degrees.

Cut pears in half. Remove stems and seeds, place in bowl. Mix with 1/3 cup AP flour, 1/2 cup sugar, 2 tsp. vanilla, 1/2 tsp. cinnamon. Set aside.

In a large bowl combine remaining flour, baking powder and salt. Cut in vegan shortening. Using your hands, work shortening into dry ingredients until the mixture is coarse crumbs. Create a well in the center of the crumbs add 1/2 cup of soymilk. Mix. If the dough is thick and crumbly, add soymilk until dough is moist and pulling at the sides of the bowl.

In a deep baking dish pour and arrange your pear mixture along the bottom. Drop dough on top in large spoonfuls, leaving some open space. Sprinkle a little sugar on the top of the dough and bake for 25-30 minutes until the cobbler top is golden.
