BBQ Seitan Ribs & Green Beans with Roasted Shallots

RECIPE – BBQ Seitan Ribs

3 cups vital wheat gluten
1/2 cup rye flour
1/2 cup nutritional yeast
2 cups barbeque sauce
1 cup water
2 Tbs canola (or other vegetable) oil

In a large bowl combine wheat gluten, rye flour and nutritional yeast. Add the barbeque sauce, water and oil to mixture. Shape into rib forms and wrap tightly in tin foil. Steam for 25 minutes. Remove from pot. Ready to eat with additional barbeque sauce! Or you can throw these ribs on the grill/broiler for about 5 minutes on each side, brushing with sauce and then browning it to create a crust.

RECIPE – Green Beans with Roasted Shallots

1 lb. green beans
3 shallots
2 Tbs olive oil
1 1/2 Tbs basalmic vinegar
1/2 tsp salt
Pepper to taste

Chop shallots finely. In a foil pouch combine shallots, olive oil, vinegar, salt and pepper. Wrap tightly. Place in preheated oven at 375 degrees for 1 hour. Trim ends of beans, cook in boiling water for 5 minutes. Drain beans and put in medium sized bowl. Beans should still have a little snap. Add shallot mixture to beans and serve.
