RECIPE – Gazpacho
The Vegetarian Librarian

2 cucumbers
1 large can of whole tomatoes
4 slices of day old bread
2 cloves of garlic
2 Tbs red wine vinegar
3 Tbs olive oil
1 cup water
Salt and pepper to taste

Peel and chop cucumbers into bite size pieces. Cut bread into 1 inch pieces. Chop garlic. In your food processor blend tomatoes, bread, garlic, vinegar, olive oil, water and half of the cucumbers until smooth. Season with salt and pepper. Top with reserved cucumbers.
