Vegan Mac & ‘Cheese’

RECIPE – Vegan Mac & ‘Cheese’
The Vegetarian Librarian w Locks

1 lb macaroni
1 cup nutritional yeast
1 cup unsweetened soy milk
2/3 cup water
1/2 cup canola oil
1/4 block firm tofu
1/3 cup tamari
1 1/2 tsp paprika
1 tsp garlic powder
1 generous squirt of mustard

Preheat oven to 350F. Cook macaroni as directed on box. Drain and rinse with cool water (to halt cooking). In a food processor blend all the other ingredients until smooth. In a large bowl combine the blended ‘cheese’ sauce mixture with the cooked macaroni. Mix well so the sauce gets on all the noodles. Bake in a large casserole dish uncovered for 15 minutes.

This recipe is so easy, cheap and delicious. We make it once a week since filming the webisode.

SPICE IT UP!
Add a Chipotle pepper or two when blending up the sauce ingredients. Gives the dish a nice smokey kick! Look for the little 7oz. cans that say “Chipotle Peppers in Adobo Sauce.”
